Easy Store Cupboard Tomato Soup
Here’s a super quick, non sandwich lunch.
Both children like it (well one tolerates it more than other soups).
It saves the environment and your pennies and it originated from a children’s cooking book so I promise it’s easy!
1 shallot/small onion
1 clove garlic
1 stock cube
1 dst spoon honey (no need to measure – it’s just a squirt)
1 tin of chopped or plum tomotoes.
Roughly chop onion and garlic and soften in a small amount of oil for 5-10 minutes.
Add tin of tomatoes. Fill the now empty tin with water and add to the pan with the stock cube (chop it up for ease of dispersal) and the honey. You may want to add basil/oregano.
Bring to the boil and let it simmer for 15-20 mins.
Annihilate with a stick blender or equivalent.
Serve at precisely 12.50 for child A and with bits of toast cut into butterflies for child B. Other serving suggestions are available!!
